Grilled Stone Fruit with Toasted Thyme Crumble
I am about to share with you one of my favorite easy recipes from “Seriously Delish” by Jessica Merchant. This is so easy and I love it because it tastes like dessert but you can totally have it for breakfast. And you can almost believe it’s completely healthy. But first…

I love lists. I am addicted, completely, to making lists. Which probably explains why I’m making a random list about myself. I also love surveys.
I don’t understand the point of magazines. You’re essentially spending ten dollars for a book filled with a bunch of ads trying to get you to buy more stuff. I can’t handle it.
I have an overwhelming amount of cookbooks. Its ridiculous but I can’t stop. And when there isn’t a cookbook I want to buy, I actively go searching for one. It’s a problem.
I have embarrassing television tastes. I even go so far as to join facebook groups about them. It’s all very embarrassing. Good thing I have no pride and dignity left or I’d be worried.
Anyway, today I’m sharing a recipe that is really simple, but honest to goodness one of my absolute favorites. Perfect when you want to eat a dessert and not feel as guilty as you normally do. Great way to trick yourself into believing you might as well be eating lettuce.
Yay! I also like that this recipe is relatively versatile and is just as good when you’re using nectarines, or peaches instead of plums. If it’s stone fruit, it is a good substitution.
Grilled Plums with Toasted Thyme Crumble
4 plums, sliced in half and pitted
1Tbs. extra virgin Olive Oil
Pinch of salt
1/2 cup old fashioned oats
2Tbs Light brown sugar
2tsp chopped fresh thyme
Preheat the grill to high. (I used a Panini press, you can use a indoor grill plate or George Foreman grill) Brush the cut side of each plum with olive oil and sprinkle with salt. Place them on a grill pan and cook until slightly caramelly, 2-3 minutes.
Heat a medium skillet over medium high heat. Add the butter, oats and brown sugar and stir to coat. Cook for five minutes, tossing occasionally, until the oats begin to toast. Stir in the thyme and turn off the heat.
Arrange the plums cut side up on a plate and spoon the crumble into the center of the plums.
I eat this any time I have some fresh stone fruit around because it is delicious and super easy. I highly recommend it. There won’t be any evidence left that you ate the entire thing. Enjoy! I know you will.
